Incredible Gluten-Free Bread
The title of this post seems oxymoronic, right? Who would call gluten-free bread delicious? Probably not someone who has tried regular bread. Most gluten-free varieties are so dense, mealy, and hard that I once preferred to just pass the bread plate. But now I've found the secret to delicious gluten-free bread: you need to make it yourself. None of this freezer-section-of-the-supermarket, is-it-made-of-concrete bread. If you've found a store bought brand that you love, that's wonderful (and what is it, please?) but I never have. Skip the supermarket and get thee to a Bulk Barn or anywhere else you can buy nuts and seeds. There are two recipes for gluten-free bread I keep on rotation and this is one of them.Being a big fan of the My New Roots blog, I had high hopes for this 'life-changing loaf of bread.' But when I looked at the ingredients list I have to admit I was a bit skeptical. No brown rice or buckwheat flour? No chopping the nuts and seeds first? Wait, I put the almonds in whole? When the last direction was to take the loaf out of the pan part way through and finish baking it upside down I thought it sounded a wee wackadoodle. But why not? And it turns out that this bread is, IN FACT, life-changing. It's delicious, healthy, slices easily, and toasts like a dream. It requires a little pre-planning in that you obviously need the ingredients on hand but they're easy to find. You may not be familiar with psyllium seed husks but they're super cheap and sold at Bulk Barn. You also need to let the mixture sit for a while (I usually leave mine overnight) so the satisfaction is delayed but worth it. For this particular loaf I didn't have enough oats in the house, so only used about a third of what was called for, but it still worked fine. I also mixed it in a separate bowl (not right in the loaf pan) and used parchment paper as I don't have a silicone pan. Even if you don't have celiac disease (I don't) this is a great option as it's free of preservatives and full of good-for-you ingredients. This tastes amazing straight out of the oven (or toaster!) and I love it best with some almond butter and banana or smoked salmon.If you give this a try - and I hope you will - please let me know how you like it!
